Contemporary Meatless Gourmet Dishes

  • Viva Tastings Catering Kitchen 52 Henry Street Toronto, ON, M5T 1X2 Canada (map)

Learn how to create the perfect gourmet vegetarian menu from scratch with Chef Karen.

Whether you are a vegetarian or want to cut down on meaty meals, this course will inspire you to embrace a new kind, 'Vegetarian Cuisine,' packed with flavour. You will use unique ingredients like garlic, onion, and mushroom confit, which elevate these dishes. You don't always have to revert to a pasta dish or Pizza; there are many more options.

Here are some examples of what may be on the three-to-four recipe menu:

Spicy Tomato Cashew Soup

Roasted Mushrooms with Garlic and Tomatoes

Fluffy Garlic Butter and Herbed Rice Pilaf

Fig and Red Cabbage Salad

Caramelized Cherry Tomato Tarte Tatin

Moroccan Spiced Pie with Butternut Squash, Spinach, Pistachios, Cranberries and more...

After the preparation, our chef instructors will plate the meal, and the students will be seated to enjoy their creations. During the meal, the student chefs will explain how they prepared their recipe so that everyone learns to make all the dishes. The recipes will be e-mailed to the students after the class

Menu

The stated menu may differ due to seasonality, ingredient availability, and our creative impulses. However, the final menu will remain faithful to the course theme.
